What is the role of fermentation in your kitchen?
As a functional restaurant, we are very aware of the importance of fermentation in digestion and in the intestinal microbiota, which is so important for our health and well-being. So, we make a point of having, for example, slow-fermented bread and, of course, serving your kombucha on our drinks menu.
When did you first hear about kombucha?
I started my dietary change in 2011 and it was around that time that I heard about kombucha and its benefits. I confess that at the time I didn’t love the taste, but it’s something that grows in you and nowadays I love it!
Why did you decide to integrate Aquela Kombucha into your gastronomic offer?
Since the beginning of The Therapist we have been serving kombucha and when we heard about AK and saw the image of the bottles and labels, the way it is produced and of course the team behind this brand, we thought it made perfect sense for our project.
What is your favorite AK and why?
I’m quite traditional… I love the Mint Kombucha! It never fails!
