What is the role of fermentation in your kitchen?
Fermentation is a magical universe (literally). It is fascinating to realize that, under certain conditions, food is transformed without our intervention, giving rise to new flavors and new properties that greatly enrich gastronomy! In our kitchen we are still learning and every time a fermentation process is successful it is a new world that is opening up!
When did you first hear about kombucha?
The first time we heard about kombucha was when Maria Lima visited us to present Aquela Kombucha. We were soon surrendered.
Why did you decide to integrate Aquela Kombucha into your gastronomic offer?
It was right after this visit, we tasted the product and loved it! In addition to the various benefits associated with the consumption of the drink, we are interested in having with us a locally produced and small-scale product, of exceptional quality!
